Why, oh why...

did I buy cottage cheese at Costco? What was I thinking? Now, don't get me wrong, I like cottage cheese. A little bit. No one else in my family likes cottage cheese...not even a little bit. And now we have a lot of it.

Did I think I would lose weight just by having a gallon of this stuff in my fridge? And why would I think that? Do you ever see thin people eating cottage cheese? No. Only overweight wanna-be dieting people buy and eat cottage cheese. I have a theory about this: forget butter and french fries, it's the cottage cheese and diet coke that are making us fat.

Very nice, cottage cheese. I prefer to buy the rice pudding at Sam's if you really want to pack "it" on.

You can use cottage cheese for a lot of cooking.
Here is one I use for my fam.
High Protein Pancakes - good meal
1 cup cottage cheese (Blend a little bit)
4 eggs
1/2 cup flour
1/4 t. salt
1/4 cup oil
1/2 cup milk
1/2 t. vanilla
I add a little sugar, pinch or two
Whirl at high speed 1 min. Bake on lightly greased griddle or waffle iron.
This serves 3 so you may need to double.

You also can freeze cottage cheese if you use it to cook with latter.

You can FREEZE cottage cheese? Who knew? I better not. Then I'll just have a Costco-sized tub of cottage cheese sitting in my freezer for the next year, making me feel stupid and guilty every time I go down for a pack of waffles. :-)

Awesome theory. I often have bought tons of food when I go gung ho diet and then think...I don't like such and such that much. Example: salad. I really don't like salad but it is a staple diet food. I also don't care too much for vegetables in general. Or fat free things. Fudgecicles, not as good as a big thing of chocolate icecream.
