superfast

The Fall schedule is here, but not fall. Yesterday it was 93 degrees. (Thank goodness the noisy boys’ school has air conditioning!)

And Fall? It brings lots of activity with it.

So…in honor of the backwards edition of WFMW, here’s my question: what’s your “it’s soccer practice night and we just walked in the door, but I’ve got to get everyone fed” go-to meal? (It can be make-ahead or super-fast, either way!)

Homemade breakfast sandwiches with english muffins, eggs, and bacon or something similar.

Lots of protein :)

A quick meal I like to make is chicken nachos using canned chicken, refried beans, chips, cheese & cut up tomatoes. Goes together fast and you hit all the food groups =) Another choice would be to do something in the crockpot - I discovered cooking "baked" potatoes in the crockpot. No need to heat the oven and you could have toppings prepped a head of time. Good luck!

We have one night a week where we have to leave the house by 5 and don't get home until 8:30...we HAVE to eat on the go. Many times I make things that can be ate cold....some of our favorites are pasta salad (with chicken, olives, tomatos, artichokes..whatever you want!). It's already made (the day before) and holds lots of yummy goodness in it. We also will make homemade pizza (my kids love it cold!) and wrap it up to go with us. Of course there is always grilled cheese or peanut butter and that can travel well. Also, if you can eat at home but just need something already made..make up something ahead of time and throw it in the crock pot OR make a casserole ahead of time, throw it in the freezer and then all you have to do is take it out in th am to thaw and throw it in to either cook or warm up!

I always have summer sausage/cheese and crackers on hand. Another fav. is a can of refried beans shredded cheese and tortillas. Open the can, spread on tortilla, sprinkle with cheese and microwave it for 50 or so seconds. I also grab $1 burgers from McDonalds and take home to eat with fruit and carrots. But most of all have fun because it will be all over to soon.

Tacos: brown one pound of ground beef. Drain, then stir in one small can of tomato sauce, taco seasoning packet and a can of refried beans. Heat and serve on either hard shell or soft tacos and top as you like (we use cheese, sour cream, taco sauce and tomatoes). Super fast. Super yummy.

Btw. tell Llama Papa I'm praying for him and his shoulder (ugh!).

We totally have this issue too... I'm glad you posted this question and I'm gleaning from the answers as well!
One thing that my DH was amazed "worked" the other night was... grilling hamburgers/hotdogs. If they are ready before you go (or are like me, and just get the frozen block ones from Sam's) he walked in, threw them on the grill, while the kids showered and I was in the kitchen slicing tomatoes, lettuce, cheese, bacon (yeah, baby!) and getting all the goodies on the table. We just had chips and veggies to dip.
We were sitting down to eat within a half hour of walking in the door! (Yes, all 6 kids got bathed too!!)

A couple of things have worked for me lately, but they both involve a little planning ahead...

Crock pot- one of our fav's was actually given to me by YOU, years ago... Pork shoulder cooked on low all day with a bottle of BBQ sauce. Cook it until it's fall-apart tender. Shred it up with a fork and serve on whole wheat buns with cut up fruit.

The other thing I do alot is make a casserole in the morning while the kids are at school. Put it all together and just put it in the fridge. When we get home, I pop it in the oven to heat through and dinner is done!

If all else fails, fast food won't kill them- as long as it's not every night ;-)

Spaghetti and meatballs...1 pkg of frozen meatballs, 1 can tomato sauce, 1 can italian style diced tomatoes, 1 tbsp minced garlic (refrigerated kind) and one tbsp italian seasoning. Put all in a pan and cook until meatballs are done. While the sauce is cooking, prepare the noodles and bread and in about 20 minutes you have a meal! I also normally throw in a salad (use bagged salad if you need to!)

Hey there -- if you are having trouble placing me, my momma is the bug/ dumpster lady from WFMW. (hanging head in shame -- and laughing, too) My momma called tonight to tell me that your idea was brilliant. Tomorrow she is enlisting the help of the second grade during their playground time!!!! Thanks for making my momma happy.

Something I like to make for busy nights is calzones. You can even make them ahead and just warm them up and take them on the road. I buy thr Rhodes frozen rolls, thaw them and add whatever meat, cheese, veggie and sauce is available. We have had pepperoni, marinara sauce and cheese, chicken cream cheese and spinach, turkey, tomatoe and swiss, really what ever you want to put in is great. Just bake per rolls directions and enjoy!

These were nights my mom called "crockpot nights". She would start dinner at breakfast, leave for work, and upon our return from our after-school activities and practices, dinner would be piping hot and ready for us. It always suits this time of year because it's getting chillier, so there's an added perk!

aldi's spinach/cheese rigatoni with a salad. you just boil the rigatoni for 5 minutes and mix the spice packet with olive oil. it's on the table in 10 minutes.

I always go to pasta or a quick stir fry with leftovers or a bunch of veggies and rice.

I LOVE your blog name, my son used to call llama's "mamams" when we would drive by a farm that has a bunch of them. I thought it was so cute so now I've gotten him tons of stuff with llamas.
